A note

Bean-to-bar, single origin, and other phrases that should mean something

A real bean-to-bar shop sources cocoa beans and roasts, refines, and tempers everything themselves. They will tell you the country, the farm, and how long they conched. A great chocolatier might not do any of that and still produce world-class pralines. Both kinds of shops are in Calgary. Both belong on this map. The phrase "bean-to-bar" should mean what it says, though, so we use it carefully.
